An exceptionally limited, late-disgorged Tasmanian sparkling wine made entirely from Chardonnay grown at the Stringybark vineyard in the West Tamar. This second disgorgement spent almost eight years on lees, combining freshness and precision with the savoury complexity of extended ageing. Only 900 individually numbered bottles were released.

Founded by Frieda Henskens and David Rankin, Henskens Rankin specialises in small-production traditional-method sparkling wines. Working with fruit sourced from sustainability-minded Tasmanian growers, the pair favour extended lees ageing and detailed, small-scale winemaking to create distinctive wines with finesse, complexity and longevity.

Tasting Note

Pale green-gold with aromas of lime blossom, lemon curd, white flowers and crisp green apple. Toasted almond and wet-stone notes add savoury complexity, while the palate remains delicate, precise and finely structured. The finish is long, dry and gently saline.

Serve well chilled as an aperitif or alongside oysters, shellfish, delicate seafood, soft cheeses or lemon-based dishes.
