Joshua Cooper is a central Victorian winemaker focused on the revival of elegant, age-worthy Australian Cabernet alongside finely structured Chardonnay and Pinot Noir. He works with distinctive vineyard parcels and uses patient, low-intervention methods to build clarity, savoury detail and longevity.

Tasting Note

Cassis, gravel and cedar are lifted by violet and wild herbs. The palate is medium-weight, fresh and complex, with clear fruit, serious fine-grained tannin and a persistent savoury finish. Decant before serving.

Pair with lamb cutlets, roast beef, mushrooms or hard cheese.
