The 2021 Momento Mori Amphora Syrah is a vivid, low-intervention Heathcote red made with whole bunches and a short maceration. Almost a year in a 400-litre clay amphora preserves perfume and energy while building an earthy, textural and distinctly savoury shape.

Momento Mori is the project of winemaker Dane Johns, who works with organically farmed vineyards across Victoria. Fermentation is spontaneous and the cellar approach is deliberately gentle, often using amphora and neutral vessels to make pure, expressive wines without unnecessary additions.

Tasting Note

Bright red and dark berries meet cracked pepper, dried herbs, earth and dusty spice. The palate is energetic and savoury, with fine-grained texture, fresh acidity and a lightly wild, mineral finish.

Serve lightly chilled with charcuterie, lamb, grilled vegetables or mushroom dishes.
