Whole-bunch pressed and matured in oak before a short period in stainless steel, it delivers vibrant citrus fruit, mineral tension and the distinctive saline character of this remarkable southern vineyard.

Producer

Sailor Seeks Horse is the project of Paul and Gilli Lipscombe, who began restoring their north-east-facing Huon Valley vineyard in 2010. Their isolated, cool-climate site is farmed without synthetic additions, while the wines are made with wild fermentation, gentle handling and minimal intervention. The result is Chardonnay and Pinot Noir with clarity, texture and a distinct sense of Tasmania’s far south.

Tasting Note

Green apple, lime curd and white stone fruit are layered with smoked honey, lemon aspen, bunya nut and subtle savoury oak. The palate is chiseled and linear yet gently rounded, combining depth of flavour with bright natural acidity, smoky complexity and a persistent saline finish.

Serve lightly chilled with oysters, scallops, roast chicken, grilled fish or creamy mushroom dishes. A short decant will help its texture and savoury detail unfold.
