The 2025 De La Bêche High-Density Chardonnay is a tiny release from a 0.5-hectare Taradale vineyard planted at 15,000 vines per hectare. Natural fermentation and maturation in French oak translate this high-density Macedon Ranges site into a compact, saline and finely detailed wine.

De La Bêche is the family project of viticulturist and winemaker Tim Brown in Taradale. Brown replanted the family land at very high density to Chardonnay, Pinot Noir and Aligoté, farming with non-certified organic principles and making the wines simply with natural primary and malolactic fermentation to highlight the site’s mudstone, sandstone, ironstone and quartz soils.

Tasting Note

Ripe pear, pomelo and grapefruit meet toasted cereal, cinnamon, hazelnut, rosemary and fine gunflint detail. Dense and compact in texture, the palate carries a distinctive marine freshness into a long saline finish.

Serve with oysters, roast chicken, grilled fish or nutty hard cheese.
