DAOSA Natural Réserve is a traditional-method sparkling wine from the high, cool slopes of Piccadilly Valley in the Adelaide Hills. Pinot Noir leads the blend, supported by Chardonnay and Pinot Meunier, with reserve wines bringing savoury depth to its bright fruit, fine bead and energetic finish.

DAOSA is the sparkling-wine project of Xavier Bizot and Lucy Croser. Drawing on fruit from high-altitude Piccadilly Valley vineyards, the wines are made using the traditional bottle-fermentation method. Natural Réserve combines the freshness of the current harvest with reserve wines matured in large old oak, creating a distinctly Australian sparkling wine with both precision and complexity.

Tasting Note

Green and red apple, strawberry and grapefruit are joined by hints of honeysuckle, nougat and a gentle savoury, saline edge. The palate is focused and textural, with a fine, energetic mousse, bright pithy acidity and a dry, persistent finish.

Serve well chilled as an aperitif or with oysters, fried snacks, roast chicken, duck, soft cheeses or a grazing platter.
